Sorrel is a leafy erect plant that grows to 35cm. It has juicy stems and slightly arrowhead shaped leaves. The leaves when grown in shaded situations produce a slightly tart lemony flavour used extensively in European cuisine. Sorrel soup is delicious and the leaves can be used in salad mixes and cooked as one would cook spinach. It teams well with both mashed or boiled potatoes or with eel. An infusion of the roots can make various coloured dyes and polishes for furniture and silverwear. It is commonly used in cheesemaking to curdle the milk. The plant is frost hardy. Sow the seeds about 4-6 weeks before the last frost and lightly cover with fine soil. The seeds will germinate in about 7-10 days. Transplant them into the garden when the seedlings are about 5 cm high. Space them about 30 cm apart. The plants are perrenial but perform best in the first 4 years. Water the plants well to prevent over bitter leaves developing.
